Ingredients

1.2 lb. (600 g) Scotch Fillet Steak Boneless rib eye
2 Tbsps. Vegetable Oil Divided
1 Large Onion (or 2 small onions), sliced
10 oz. (300g) Mushrooms Sliced (not too thin)
3 Tbsps. (40g) Butter
2 Tbsps. All-purpose Flour Can substitute with cornstarch or cornflour
2 Cups (500ml) Beef Broth Preferably salt reduced
1 Tbsp. Dijon Mustard
2/3 Cup (150 ml) Sour Cream
Salt As per taste
Pepper As per taste
Serving
8-10 oz. (250-300 g) Pasta or Egg Noodles As per choice
Chopped Chives For garnish (optional)

First of all, flatten the steaks to about ¾ centimetres or 1/3-inch thick using your fist, rolling pin or a mallet. Cut it into long strips of 5 millimetres or 1/5”, removing the excess fat. Season the beef with salt and pepper to taste.

Then, fry the beef pieces in oil over high heat for 30 seconds. Turn over the pieces and fry for another 30 seconds until slightly brown on all sides. Repeat until the remaining beef pieces are finished. Transfer the beef to a separate dish.

Now, melt 3 tablespoons of butter in the same skillet. Sauté the sliced onions until golden brown. Then, add 10 oz. of sliced mushrooms and cook for a couple of minutes. To this, add in 2 tablespoons of all-purpose flour and combine well with the ingredients.

Now, pour in 2 cups of beef broth and give it a good stir. Later, add in 2/3 cup of sour cream, 1 tablespoon of Dijon mustard and stir well. Bring it to a boil. Add in salt and pepper for seasoning.

Once it starts boiling, add in the fried beef pieces and cook for about 1 minute. Turn off the heat and then transfer to a plate. Garnish the beef stroganoff with some chopped chives and serve it with pasta or egg noodles.
