For the dough
1 Large Egg
100 ml of Water
100 ml of Milk
1/2 Tsp. Salt
400-500 g of Plain Flour
2 Tbsps. of Olive Oil
For the Beef Filling
1 kg of Fatty Beef Cut
4 Medium Onions
2-3 Garlic Cloves
1 Tbsp. of Salt
1 Tbsp. of Pepper
2 Bay Leaves
Beef or Vegetable Stock

For making the dough, add the plain flour in a mixing bowl. Then, add water, milk, eggs and a little bit oil in a separate dish and mix all together. Gradually add the mixture to the plain flour and knead it until it forms a dough. Cover the dough with a cling wrap and leave it to rest for at least 30 minutes.


Meanwhile, you need to prepare the beef filling. Add the roughly-cut onions and garlic to your food processor along with some water. Grind until it turns into a smooth paste. Now, take a bowl of minced beef and season it with salt and pepper to taste. Add in the garlic-onion paste and mix everything together until it is well combined.


When your dough is ready, take a small amount and roll it out into small equal circles. You may dust the dough with the flour to avoid sticking to your hands or cooking platform. Place 1 teaspoon of the beef filling over each circular pieces in the middle.


Now, lift the dough in your hand and pinch it tight on all the sides so that the filling stays in the middle and then roll it up. Repeat the process for the remaining dough. You can also use the dumpling moulds to prepare the dumplings of equal sizes as shown in the video.


Once done, place the dumplings over the flour until frying to prevent them from sticking. Now, add the vegetable stock or the beef stock in a deep pot. Add some bay leaves and peppercorns. Once the stock reaches its boiling point, drop in the dumplings in the middle and cook it for about 5-8 minutes until the dumplings start to float. Remove the dumplings from the stock and add butter if you want. Mix it well and then serve hot with the sour cream.
