Meat Tomato Sauce

Finely chop a large onion and 2 garlic cloves set aside. Heat 2 tablespoons of olive oil over medium heat and sauté the chopped onions and garlic until translucent and softened. At this time, add in 500 grams of ground meat (beef and pork, each 50%).

Cook for about 3 minutes over high heat. Add in 2 tablespoons of raisins and mix well. Cook the meat until it changes its colour.

To this, add 100 grams of tomato sauce, salt to taste and again cook for another 2-3 minutes over high heat. Keep stirring the meat sauce occasionally. Once cooked, remove from the heat and set aside in a bowl for later.

Béchamel Sauce

Boil 1 litre of milk over medium heat. Meanwhile, melt 100 grams of butter in a pan on medium heat. Once the butter melts completely, add in 100 grams of all-purpose flour. Whisk it nicely and cook for about 1 minute.

Then, gradually add in ½ of the hot milk while stirring the mixture continuously. Later, add the mixture with the rest of the hot milk and cook over medium heat while whisking it vigorously until the sauce thickens.

Bring the mixture to a boil and keep stirring it constantly. Lastly, add in the nutmeg to taste and a generous pinch of salt and pepper. Mix it completely and your béchamel sauce is ready.

Cannelloni Assembling

Heat enough water with a pinch of salt and drop in the plaques of cannelloni. Cook for about 4-5 minutes until tenderized. Meanwhile, preheat the oven to 390⁰ F or 200⁰ C. Take a baking tray and form a base of béchamel sauce using half of it initially.

Then, place the meat tomato sauce over the cannelloni and then create into flat rolls. Place the cannelloni with the union facing down over the béchamel sauce one by one. Repeat the process until done. Fill the side edges of the rolls using a spoon or a cannelloni tube.

Then, add the other half of the béchamel sauce over the cannelloni and sprinkle with Parmesan cheese over the sauce. Then, bake the cannelloni for 15-20 minutes at 390⁰ F or 200⁰ C. after 20 minutes, remove from the oven and then serve hot.
