First, cut off the ends and peel off the zucchini. Slice and cut the courgette into equal pieces. Now, place the cut courgette in a blender.
Then, add in an egg, milk and salt to taste. Blend the ingredients until it forms a smooth mixture. Pour the mixture into a bowl. Add in 15 millilitres of oil and then flour. Blend it again to get an even mixture.
Next, preheat a pan and add 15 millilitres of oil. Once the oil is hot enough, spoon or pour the mixture in small equal amounts into the pan.
Fry the pancakes on medium to high heat until they are golden brown on both the sides.
Once fried, place the pancakes on a paper towel to get rid of excess oil. Repeat the process until the mixture finishes.
Your zucchini mini pancakes are ready to serve!
