Before you proceed, you need to be ready with the dough which will be used for making the bolani katchalu. For this, take 2-3 cups of flour in a large bowl, add some warm water and a pinch of salt and combine it well to form nice soft dough. Leave the dough for 1 hour.

Now, lets’ get started with the potato stuffing. Take 5 medium-sized potatoes and chop it finely. Then, cook the chopped potatoes on a medium flame.

Next, mash the potatoes to make sure there are no lumps. You may also boil the potatoes and mash it to have better stuffing. Keep it aside.

Next, for the spice mixture, heat 2-3 tablespoons of oil and add 1 chopped onion to it. Sauté the onions well until it turns golden brown.

Next, add the grated garlic to the onions and cook it until the garlic paste loses its raw aroma. To this, add 1 teaspoon of red chilli flakes (optional), 1 teaspoon of coriander powder and some black pepper to taste. Mix the spices well. Add half a cup of water to prevent the spices from burning. Add salt to taste and cook the spice mixture well until the oil separates.

Now, take 4 finely-chopped onions in a large bowl and add the previously cook potatoes to it. Mix it together. Then, add a few chopped coriander leaves and mix it again. To this, add the previously cooked spice mixture and mix everything together.

Once the dough is ready, create few small round-shaped balls out of it and then roll them into circular-shaped flatbreads. Then, spread the potato stuffing on one half of the flatbread. Cover the stuffing with the other half and press the edges with a fork to prevent the stuffing from flowing out.

Fry it on medium heat until it turns golden brown on one side. Flip over the bread to the other side and fry it again. Once fried, transfer the stuffed bread to a plate. Repeat the process until you finish all the dough and stuffing. Then, serve it hot with plain yoghurt or mint yoghurt.
