First of all, peel off the papaya skin, chop it on its edges and then cut off finger-long slices of the chopped portions. Keep the chopped papaya aside. Now, it’s time to prepare some Tam. Take 3 red and green chillies according to your taste, 1 clove of garlic and tamp them in a mortar.

Next, add 3 tablespoons of paste sugar and 1.5 teaspoons of shrimp paste (you may reduce the amount if it’s too salty). Mix these and tamp them again altogether. After that, add 1 tablespoon of concentrated tamarind water.

Next, add 1 tablespoon of fish sauce. Mix and tamp the mixture evenly. Then, cut one lime and squeeze out the lemon juice into the mixture throwing the lemon skin inside. Next, add 2 medium-sized tomatoes to it.

Smash the mixture again gently. After that, put the chopped papaya into the mortar and slightly stir with a spoon evenly. You may add some fish sauce to taste if required.

The authentic Thai papaya salad is ready to be served!
