For the White Sauce

Take a sauce pan and heat it on a medium flame. Add a tablespoon of butter into the pan and let it melt down. To this, add a tablespoon of all-purpose flour. Whisk the mixture for about 30 seconds to a minute till there are no lumps.

When you see the bubbles coming up, pour a cup of milk into the pan and stir it vigorously so that there are no lumps. Add a little of white pepper, a pinch of salt, a dash of nutmeg and allow the sauce to thicken by stirring it constantly.

3

Bring the sauce to a boil and allow it to bubble for a couple of minutes. After that, add ½ a cup of finely grated cheese to the sauce. Turn off the heat and continue stirring the sauce. Keep the sauce aside and let it cool off.

For the Sandwich

Take 4 slices of toasted bread and coat the topping of each slice with a thin layer of nutmeg. Next, place the ham slices on the top surface of two slices of bread.

5

Add the remainder of the grated Gruyere Swiss cheese over the ham. Cover the ham with the remaining slice of bread. Next, add the béchamel white sauce as the topping. And lastly, garnish the top surface with the remaining grated cheese.

You may also add a little bit of herbs de Provence (optional). Place the sandwiches on a baking paper on a tray, transfer them to preheated oven and bake at 4⁰C temperature. After 15 minutes, take out the delicious sandwiches and serve them hot.
