First of all, wash and soak 3 cups of Basmati rice for 30 minutes. Then, heat ½ a cup of oil in a deep dish. To this, add 1 large chopped onion and sauté it well until it turns brown. Next, add the chicken pieces and stir it well.

Next, add 1 tablespoon of chopped garlic, 1 chicken stock cube or magic cube and fry until the chicken turns golden brown. Once it has changed its colour, add 5 cups of water to it and salt to taste. Next, take a few black peppers (kali mirch), green cardamoms (elaichi), star anises (chakra phool), nutmegs (jaiphal), cloves (laung) and mace (javitri), and grind them all together to a fine powder.

Put the powder into the boiling chicken. Mix it again. Cover the chicken and allow it to cook until the chicken becomes tender. Once cooked, separate the chicken pieces from the stock.

Now, take the soaked basmati rice and put it into the same boiling stock. Mix it well, cover with a lid and cook it for about 5 minutes on a high flame. Remove the lid, mix it again and cook it covered for another 5 minutes on a medium flame.

Uncover the dish, mix it again gently and cook it again for another 10 minutes on a low flame. Next, take a frying pan and add 1 tablespoon of butter to it. Heat until the butter melts, and then add the fried chicken pieces along with the remaining stock from chicken.

Fry the chicken from all sides. Transfer the chicken to a plate. Then, in the same pan, add 2 tablespoons of sugar and allow it to caramelize. To this, add 1 tablespoon of oil and mix it well.

Next, add 1 cup of chopped finger-long carrots to it and fry it for 1 minute. Put a few raisins and a cinnamon stick, and fry the ingredients again.

Now, it’s time to assemble all! Place the chicken pieces over the cooked rice, add the caramelized carrot and raisins mix it gently and serve it hot!
