1 lb. Beef Sirloin Sliced thinly
3 Eggs
6 Tbsps. Cooking oil
Tapa Marinade
3 Tbsps. Knorr Liquid Seasoning
6 Cloves of Garlic Crushed
3/4 Cups Pineapple Juice
2 Tbsps. Brown Sugar
1/4 Tsp. Ground White Pepper
For Sinangag
5 Cups Leftover Rice
1 Tsp. Salt
5 Cloves of Garlic Crushed

The first thing to do is to marinate the beef. In a mixing bowl, take 1 pound of thinly-sliced beef sirloin. To this, add 6 crushed garlic cloves, 2 tablespoons of dark brown sugar, ½ teaspoon of ground white pepper or black pepper and ¾ cup of pineapple juice to tenderize the beef during the marination and add a sweet and sour taste to it.

Next, add 3 tablespoons of Knorr liquid seasoning to add to the flavour of tapa. Mix everything together and then refrigerate it for at least 3 hours for the marination process.

Meanwhile, heat some cooking oil in a flat bottomed pan and add in 5 crushed garlic cloves and cook until the garlic turns light brown in colour. Then, add in half of the leftover rice first so that it’s easy to mix with the fried garlic. Once the rice is mixed well with the garlic, add in the other half of the rice.

Then, continue stir-frying the rice for about 3 minutes. Add 1 teaspoon of the salt, mix and continue frying for another 3-5 minutes. Once cooked, transfer the rice to a plate and set aside.

Once done with the sinangag, take out the marinated tapa from the fridge. Place the tapa in a pan and add some water to it and simmer to tenderize the tapa. When the water starts to evaporate, add some cooking oil over the tapa so that even if the water evaporates the oil is there in the tapa. Cover the tapa and cook until the water reduces to half.

Then, remove the lid and cook until all the water evaporates. Continue cooking until you see the beef covered with oil only. Continue frying the tapa for another 3-5 minutes. Remove the tapa from the pan and place it on a serving plate. Keep it aside.

Now, for frying the eggs, put some oil in a pan and heat it on a medium flame. Once the oil is hot enough, carefully crack an egg into it. Add salt to taste and let the white portion cook slowly. Then, add some water on the sides and then cover the egg immediately to cook the top portion of the egg. Once the top portion is cooked, remove the egg (itlog) and place it on the serving plate. Also, place the tapa and sinangag on the same plate and enjoy your breakfast.
