Ingredients

1/2 Cup Garlic Chopped
3/4 Cup Onion Chopped
1/4 Cup Ginger Chopped
1/2 Cup Red Bell Peppers Chopped
1/4 Cup Green Bell Pepper Chopped
1/2 Cup Tomato
1/2 Cup Carrots
4-5 Bay Leaves
1 Lb. Chicken Gizzard
1 Lb. Chicken Heart
1 Tbsp. Fish Sauce
3-4 Tbsps. Soy Sauce
Annatto Extract
1 Tsp. Sugar
1/2 Cup Vinegar
1 Pc. Bouillon Cube

In a large pan, heat some oil and sauté the onions until translucent. Add in the chopped garlic followed by the chopped ginger and sauté until fragrant.

Next, add in the bay leaves, chopped tomatoes and cook for about 5 minutes. After this, add in the chicken gizzard and heart. Season it with pepper to taste.

To this, add 1 tablespoon of fish sauce, 3-4 tablespoons of soy sauce and mix well. Now, add in the chopped red chillies and ground red pepper and stir.

Later, add the chopped carrots, green bell pepper, red bell pepper and mix everything together. Stir-fry the ingredients for 3-4 minutes. Add in 1 tablespoon of annatto extract and mix well. Season it with salt and pepper if required.

Then, add 1 teaspoon of sugar, ½ a cup of vinegar. Cook it until chicken has firmed and incorporated with the mixture while stirring it occasionally.

Next, add 1 piece of bouillon cube to the chicken bopis. Cook it for another 10-15 minutes. Then, transfer it to a serving bowl and serve hot.
