Ingredients

For the Batter
1 Cup Rice Flour
1/2 Tsp. Salt
1¼ cups (310 ml) Water
1½ Tbsp. Vegetable Oil
For the Topping
150g Medium Dried Shrimp
1½ Tbsp. Vegetable Oil
2 Red Shallots
1 Tsp. Sugar
½ Tsp. fresh ground Black pepper
2 Spring Onions Thinly Sliced, For Garnish
Nuoc Cham Dipping Sauce

In a massive bowl, whisk along rice flour, salt, water and edible fat. Let it be still for an hour.

Bring a little cooking pan of water to a boil. Cook for eight minutes in a medium heat after added the shrimp. Drain and pound the shrimp with a mortar and pestle or use a kitchen appliance to create a paste.

To make the topping, heat the edible fat in a very sloppy pan over medium-low heat, then add the shrimp paste and shallots. Stirring perpetually, cookery till the shrimp is dry, regarding five to seven minutes. Add the sugar and pepper and cook for one more minute. Switch off the knob and put aside.

Prepare an outsized, wide steamer, and organize ramekins or tiny heatproof saucers within the steamer baskets in a very single layer. Whisk batter and fill ramekins until ¾ full.

Cover and steam for approximately 5 minutes, or till the rice cakes are shiny. Take away from the heat so repeat method till all the batter is employed up.

Sprinkle every ramekin with some spring onions and shrimp topping. Best Serve with Nuoc Cham dipping sauce.
